Pineapple, Orange, Cranberry Pecan Honey Rum Cake
Pineapple, Orange, Cranberry Pecan Honey Rum Cake
This cake first appeared in December of 2020. I said then if the 2020 holiday season were a cake, it would be nutty and drenched in booze. I believe that still holds true.
But seriously, this cake is possibly my favorite thing we’ve ever baked. Our pineapple, orange and cranberry rum cake is flecked with toasted pecans and drenched in Kill Devil Hills Pecan Honey Rum. That’s rum infused with pecan and honey on the Outer Banks of North Carolina, and, yes, that’s indeed very special. I think it’s kind of what fruit cake would be if fruit cake was meant to appeal to the masses.
